We are Ramona and Nicho
We met on a Swiss alpine pasture. That is where the idea for our own cheese dairy was born.
Ramona and Nicholas „Nicho“ Mühlbauer.

From the alpine pasture to our own cheese dairy
Ramona brings experience as an alpine dairyman, Nicho the craft of cheese making. At the beginning of 2025 our idea became the Dorfkäserei Königssee.
We wanted to process milk from the surrounding area into cheese here. Today that includes working with the farmers, the work in the cheese dairy and selling our varieties.
Since May 2026, the Käseglück farm shop in the valley station of the Jennerbahn has been part of it.

Our Dairy Farmers
The origin of the milk is concrete for us: these farms supply the raw material for our work. Their milk becomes our cheese wheels in Schönau.
Hochbichllehen
Schönau am Königssee
The Hochbichl farm is run by Franzerl and Evi Moderegger together with their family. Their roughly 20 dairy cows graze around the picturesquely situated farm and are cared for lovingly and with a great deal of personal commitment. In summer the young cattle spend a few months on the Gotzenalm.
That is where Ramona's path crossed with the farming family. As a dairymaid she looked after the young cattle for a summer, and in autumn Nicho and Ramona convinced the family to become part of their idea. Since the very beginning, the “Hoibichl farmers” have been loyal suppliers, providing us with the best milk.
Rennerlehen
Schönau am Königssee
The Rennerlehen lies in the middle of Schönau am Königssee and is run by Michael Resch together with his parents, Gitti and Stefan (known as “Stani”).
With great passion the family runs the small farm part-time, helping to preserve the typical small-scale farming landscape of the valley basin. What is special is that their cows spend the summer on the Saletalm right by the Königssee. Plenty of exercise, fresh mountain air and near-natural husbandry ensure particularly species-appropriate conditions.
During this alpine season the dairymaids make cheese from the milk directly on the alp. When the cattle return to the farm in autumn, Nicho can once again collect the high-quality milk for the production of our special cheese.
Aschauerlehen
Schönau am Königssee
The Aschauerlehen is a family business through and through. Hans and Barbara Angerer have run the farm for 27 years and have built it into a full-time operation with around 70 dairy cows. Their two sons, Hansi and Seppi, will take over the farm in the future and, with plenty of initiative, make it fit for the future.
When the family heard about the idea of founding a cheese dairy using regional milk, they were immediately enthusiastic and placed their complete trust in Ramona and Nicho. Thanks to their size and supply capacity, they are now an important part of the Dorfkäserei Königssee. Only with the support of all our farmers was it possible to found our cheese dairy at all.
